Whole Wheat Pancakes

Ingredients
1 egg
1/2 c. milk
1/2 tsp. vanilla
1/8 tsp. cinnamon
2 Tbl. brown sugar
1/2 to 1 Tbl. oil
1/2 c. whole wheat flour
1/2 tsp. baking powder


Instructions
I a small mixing bowl, mix everything except the flour and baking powder. Then mix in the flour and baking powder, but don't stir too much.

Notes
These pancakes have a much greater egg to flour ratio than most, resulting in a soft, sponge like pancake. The brown sugar and cinnamon really hide that "blah" pancake flavor. This is a relatively small batch - one very hungry person could eat it all, but most likely servers two to three people.
